  1. Rinse cranberries and put in a medium pot with remaining ingredients for the version you want to make. Cover and bring to a boil over high heat, then reduce heat and simmer for 10 minutes until about half the berries pop.
  2. Taste cranberry sauce, keeping in mind that the cranberry skins will be most tart when the sauce is first cooked. While the sauce is still warm, stir in additional sugar a little at a time if needed.
  3. Serve Intense Cranberry Sauce warm if desired. Let cool, then refrigerate in a covered container for at least an hour and up to 6 days.
Recipe Notes
  • Treat cranberries gently to use in a salad or as a garnish. Use the recipe above, but bring cranberries just to a boil over medium heat. Simmer gently until berries just start to pop, about 8 minutes. Remove from heat and let cool in the pot for an hour or so, then chill until needed.
  • Variation: Intense Cranberry Sauce. Use just 1/3 cup plus 1 tablespoon sugar (78 grams) and 1/3 cup water (240 ml). This tart sauce is also good warm.
