Green Bean Velvet Soup

September 13, 2020 by Linda Watson Leave a Comment

Green Bean Velvet Soup with Hummus and Roasted Carrots and Red Bell Pepper

Green Bean Velvet Soup has the velvety smoothness of a classic French velouté sauce and the comfort-food flavor of green-bean casserole. It’s healthier and easier than either one, though. No butter, no canned soup, no canned fried onion rings, no baking or stirring, yet a rich and creamy flavor! The roasted flavor comes from toasted […]

Slow-Cooker Ratatouille Italiano

July 10, 2020 by Linda Watson Leave a Comment

vegan ratatouille served on a baked potato in a bowl

My version of this classic rustic French eggplant and pepper stew amps up the flavor with oregano, chipotle, and black olives. Cook it with set-and-forget ease in your slow cooker.  You don’t need to be a cartoon mouse French chef or loads of time in the kitchen to dazzle your family.  This recipe makes a […]

Chickpea Nomelets with Greens and Mushrooms

April 28, 2019 by Linda Watson Leave a Comment

Chickpea pancakes stuffed with spinach and mushrooms, grapes

A nomelet is a savory pancake wrapped around a hearty filling, perfect for breakfast, brunch, or a light meal. This version updates a classic Cook for Good recipe to make it Nutritarian friendly. I took out the oil and added mushrooms. I also switched from yellow onions to red ones for more phytonutrients. Because this […]

Chickpea Nomelets (Eggless Omelets)

April 25, 2019 by Linda Watson Leave a Comment

chickpea-flour omelette or nomelette filled with kale, open

Nomelets are not omelets, but they can play one at breakfast, brunch, or a casual dinner. Make easy pancakes from chickpea flour and wrap around your favorite filling. The result has the toothsome tenderness of an omelet without any cholesterol or disturbing uncooked gooey parts. It’s gluten-free too. My classic recipe calls for a filling […]

French Flageolet Beans with Herbs

October 13, 2018 by Linda Watson 1 Comment

bowl of flageolet beans with carrots and garnish of parsley, rosemary, and thyme

I made this fragrant French bean stew for my garden club last weekend for just $2.15 a serving. The pale green beans hold their shape while cooking. The final flavor layer comes from fresh herbs, including rosemary from my garden.

Lemon Aquafaba Meringues with video

March 25, 2018 by Linda Watson Leave a Comment

organic aquafaba lemon meringues on a blue plate

These egg-free vegan meringues may be the ultimate something-for-nothing recipe. They taste like a melt-in-your-mouth lemon meringue pie. Instead of eggs, they use the broth left from cooking chickpeas. For flavoring, they use the zest from the lemons used to make hummus with those same chickpeas. Your only cost for these light, elegant treats is […]
