- Coconut Vegetable Curry
- brown rice
- fresh cucumber and tomato salad with basil ribbons
- ripe melon or Mexican Grilled Peach Sorbet made with cardamom instead of cinnamon
This menu has strong make-ahead elements, so you can cook parts of it when it is cooler or you have more time. The curry and rice keep in the fridge for five days and the sorbet keeps frozen for a few months. You can grill the peaches ahead too. Cut the tomatoes and basil ribbons just before serving.
