Savory and Sweet Roasted Potatoes

Get a complex play of flavors the easy way with this yin-yang dish. Roast Yukon Gold or similar white potatoes. In a separate pan, roast sweet potatoes that you've tossed with a sorghum-lime sauce. Toss them together and serve hot or at room temperature. This combination got rave reviews at my CSA potluck.

Persian Pumpkin Curry with Chickpeas

Just one bite of this fragrant fresh pumpkin curry brings me back to the Afghan restaurants my Taster and I loved when we lived near Washington DC. This recipe uses spices from the Persian classic kadu: ginger, garlic, coriander, and hot pepper. My version uses about half the oil used in most kadu recipes and no sugar. I also added chickpeas so it makes a complete meal when served with green salad and flatbread or rice. Top Persian Pumpkin Curry with Garlic Cashew Cream and a dash of fresh green mint or chives. If you don't have a cooking pumpkin, use a butternut squash.

Happy Humflower Pasta with a creamy chickpea and cauliflower sauce

Happy Humflower Sauce is part hummus, part cauliflower, and wildly rich despite the lack of fat and cholesterol. Have spectacular Whole Roasted Cauliflower on Saturday night, then make a comforting weeknight dinner by tossing this sauce with noodles. This is the plant-based recipe that finally satisfies my mac-and-cheese craving. Add a little less broth if you'd rather have a sandwich spread or dip.

Whole Roasted Cauliflower

Boil cauliflower in a rich home-made vegetable broth, then roast it for a spectacular main dish, especially if surrounded by beets, sweet potatoes, parsnips, or carrots that you roasted at the same time. People who don't like bland, raw cauliflower or even blander steamed cauliflower may start to crave this rich-tasting version. Use any extra cauliflower for Happy Humflower Sauce. Italian Dandelion Greens

Sweet pecans and raisins complement the delectable bitterness of long Italian dandelion greens, a type of chicory. Farmer Screech of Screech Owl Greenhouses told me last week that this variety is popular in Europe. (I suspect it is Catalogna Special, but I'll ask next time I see him.)  Try this recipe to tame dinosaur kale or other hardy greens you find in your CSA box: curly kale, collards, Swiss chard, or mustard greens.
