Best Vegan Chocolate Brownies. One bowl, 14 minutes, just 33 cents each organic.

Oh joy! These chocolate brownies are as good as I've ever made, yet are easy and downright healthy. I love their deep chocolate flavor, interesting mix of lighter cake with deep chocolate streaks, and a crisp top crust. If you don't tell people these are vegan brownies, no one will guess. The aquafaba provides tenderness and lightness that most egg-free brownies lack. With no worries about raw eggs, you can safely lick the extra batter from the spoon! 

These brownies are downright good for you, with whole grains, phytonutrients from the cacao, fruit, and a little healthy fat. See the nutritional information below for how much healthier these are than ones loaded with eggs and butter, like Alton Brown's version. Your budget will love them too at just 33 cents each, assuming 16 brownies from the 8x8 pan.

Chocolate Peanut Cake with Chocolate Aquafaba Frosting

This cake reminds me of the Reese's peanut-butter cups I used to stock up on for Halloween with the hopes that the kids wouldn't get them all. The light cake balances two of my favorite flavors: chocolate and peanut butter. The rich frosting is all chocolate. This sheet cake is easier to make and travels better than a layer cake, perfect for potlucks and sharing.

Organic aquafaba lemon meringues

These egg-free vegan meringues may be the ultimate something-for-nothing recipe. They taste like a melt-in-your-mouth lemon meringue pie. Instead of eggs, they use the broth left from cooking chickpeas. For flavoring, they use the zest from the lemons used to make hummus with those same chickpeas. Your only cost for these light, elegant treats is for vanilla and sugar. Try them as a light finale for a heavy holiday meal, with afternoon tea, or as holiday treats.

How to make organic aquafaba from dried beans to replace egg whites

Here's short recipe: don't pour the broth left from cooking dried beans down the drain. Strain it, then use it in place of egg whites to whip into meringues, sandwich cookies, chocolate mousse, frosting, mayonnaise and more. You could use the liquid from canned chickpeas, but home-made aquafaba is cheaper and has other benefits. Get the full, still-short recipe below.

Homemade organic cranberry sauce - intense or saucy

Make homemade organic cranberry sauce in just 3 minutes. It's best as a make-ahead dish, thicker and with a more even flavor after a night or three in the fridge. But you can serve my Intense Cranberry Sauce warm in under 15 minutes if you don't mind tart berry skins. My Saucy Cranberry Sauce has more water and sugar, so allow time for it to chill and thicken. See note for preparing whole cranberries for salads or garnish.
