Keep your cool by microwaving corn on the cob instead of boiling it. You can even use this trick in your office or a hotel room! I scored excellent organic corn this year for just a dollar an ear. Alas, though, it came without the husks. This let me see how perfect every ear was and let my farmer compost the husks and silk. But it also meant I couldn't use the ultra-easy technique I learned from this down-home video.
What I needed was a way to steam corn without husks. I didn't remember if my paper towels were microwave safe. And why waste towels anyway when I could use a Pyrex casserole?
Active time: 2 minutes. Total time: 7 minutes. Serves 2.
2 ears shucked corn on the cob
1 teaspoon water
- Put corn and water in a microwave-safe casserole. Cover casserole, put in microwave, and cook on high for 5 minutes.
- Remove cover carefully to avoid steam burns. Serve corn on the cob hot with your favorite toppings: buttery spread, garlic-infused olive oil, or lime juice and hot sauce.
Cook one ear for 4 minutes. Add 2 minutes of microwave time for every extra ear of corn. Cook up to four ears at a time.
