Halloween Pumpkin Soup Recipe

When you cook up your jack-o'-lantern, use the pumpkin puree to make Halloween Pumpkin Soup. The onion, butter, and hot pepper make a savory soup that will surprise and delight those who only think of sweetened pumpkin in pie.

Active time: 6 minutes, starting with pumpkin puree. Total time: 10 minutes. Makes 4 servings, 1 cup each.

IngredientsHalloween pumpkin soup made from jack-o-lantern

1 tablespoon butter
1/2 onion, chopped

4 cups pureed pumpkin
1/2 teaspoon salt
1/4 teaspoon ground chipotle or cayenne pepper

about 20 roasted pumpkin seeds or 1 tablespoon chopped parsley for garnish (optional)

Method

  1. In a medium pot, melt butter over medium heat. Meanwhile, peel and chop onion. Put onion in pot and cook until soft, about 5 minutes, stirring occasionally.
  2. Add pumpkin, salt, and chipotle or cayenne pepper to pot. Cook until warmed through, about 3 minutes. Taste and adjust seasonings.
  3. Serve hot, topped with a few roasted pumpkin seeds or a little chopped parsley, if desired. Refrigerate or freeze any extra.

Tips and notes

  • Make this soup vegan by cooking onion in corn oil instead of butter.
