There's good news just below the surface of the latest reports on food prices: the healthiest food costs less now. Although food prices surged in 2011, according to the USDA, grocery prices went up on some aisles and down on others. Fresh produce prices actually dropped. Rising energy prices show most in food that requires the most energy to produce, so you can find bargains and shrink your carbon footprint at the same time.
But first, check out the new recipe for cholesterol-free Sweet-Sixteen Oatmeal-Raisin Bars. Make sixteen healthy snack bars in just sixteen minutes. Sweet!
Tuck one or two of these super-healthy oatmeal-raisin bars into a lunch bag. They take just 16 minutes to make and have no cholesterol or added fat. I took some to a friend who sent these comments from her family:
We all loved them and would be very happy to find them in our lunch boxes! "Really good. " "I like the consistency." "Just the right amount of sugar." "It's like a muffin."
Good food news. The numbers show that you can battle food-price inflation by cooking the Wildly Affordable Organic way: seasonal food, low on the food chain, cooked from scratch. Check out a bigger version of this graph and a fancy new slide show on my site.
Thanks for cooking what you can. Taking a few minutes to make affordable, delicious, and healthy food really makes a difference!
Have a delicious day!
