Cook for Good Community Forum > Shallot Flower Stems

I cut a huge pile of juicy, green flower stems from my shallots, and I can't find anything about what to do with them. I'm thinking I can use them like green onions or even shallots/ Any ideas?

Kardis, what a wonderful bounty you have! The Gourmet Gardening Gals say you can eat shallot stems just as you would spring onions or garlic stems. On the other hand, if you are growing shallots to get the traditional onion-like bulb, you probably want to leave the leaves on so they can capture sunlight and feed the bulb. I'd love to know how they turn out!
