Our food education courses teach low-income families how to plan, purchase, and prepare healthy, taste meals on a budget. We're have 20 programs in 15 states and have served 50,000 families so far! We find that teaching the "planning" portion is the trickiest - especially with some families who are still learning basic nutrition info (like how to read the ingredient label) or basic food budgeting (like how to use unit pricing). The only thing I did different was use the curry powder instead of the turmeric. My first interest was saving money, followed closely by eating healthier. In my family we deal with gluten intolerance, diabetes and high cholesterol (3 different people!) Because of these concerns I like to avoid pre packaged foods because of all the added ingredients. Your recipes have helped a lot. So far my observations include "cooking for good" doesn't seem to raise blood sugar as quickly and we are fuller for a longer period. This helps eliminate snacking on empty calories (or in my house we count carbs!) The recipe was easy to follow and the whole process was quite simple and neat compared to other breads I have tried to make. We love the texture and will definitely be making it again! Not to mention it is much cheaper than the expensive prairie bread that we love from Whole Foods but can barely justify buying (especially now that we have a great alternative!). P.S. – Here is what my sister wrote me this morning after walking up the hill (she lives next door) to try some bread with her one year old, Olivia. "I would have lugged Olivia and trunk full of groceries up there for that bread. Mmmmm it was yum. It was yum with butter, It was yum with jam, It was yum w/ sunbutter... We were talking about eating well (we are both runners), and I mentioned how expensive it was to eat better food, and she said, "funny you should mention it, check out this site..." And I appreciate your limited use of animal products and the complete omission of meat and seafood. I went to your web site and read the FAQ's and completely agree with the information about calcium and protein. I'm a vegan myself, but I support the flexitarian approach and wish more people would see how easy and compassionate a vegetarian (or mostly veg) lifestyle can be. Web sites like yours will hopefully open more doors for people to make the switch (or at least move in that direction). I also appreciate you including some desserts in your meal planning. I agree that enjoying a wholesome, homemade dessert occasionally is so much more pleasurable to overloading with sugar (hidden most of the time in so many foods) all day long.
