Fresh-Start Winter Challenge Menu, Plant-Strong Week 2

Here's the menu for week 2 of the winter Cook for Good Fresh-Start Challenge.  This week is based on the winter cooking plan in Wildly Affordable Organic.  (Recipe titles are capitalized in the menus.) This plant-strong menu is cholesterol-free, with no dairy, eggs, or meat. This is how I've been eating since early December 2012 and it's delicious! Here's the shopping list for this menu.

lunch Split-Pea Soup, Coconut Corn Bread (two pieces),  banana
snack walnuts and raisins
dinner Dairy-Free Pizza with Hummus and Roasted Butternut Squash (2 slices), Green Salad with Vinaigrette, orange, Chocolate Upside-Down Cake
3 breakfast toasted Good Whisk Bread, peanut butter, tea
lunch Dairy-Free Pizza with Hummus and Roasted Butternut Squash (1 slice), broccoli, orange
snack walnuts and raisins
dinner Split-Pea Soup, Corn Bread (2 pieces), banana, Ginger-Glazed Carrot Cake
4 breakfast toasted Good Whisk Bread with peanut butter, tea
lunch Cuban Black Beans on roasted butternut squash, Green Salad with Vinaigrette, Corn Bread, orange, Ginger-Glazed Carrot Cake
